A Spring In Your Step, & On Your Plate: My Favourite Spring Crumpet Toppings

When outside is becoming the same temperature as the kitchen, you know spring has well and truly sprung! We at Crumpets By Merna are jazzing up our beloved discs of deliciousness with some seriously scrumptious spring-inspired toppings.

I thought I’d share some of my favourite spring combos that are bound to make your taste buds do a happy dance. Hello Spring!

What's in Season?

As always, I love to use what’s in season as there is such an abundance of vibrant and delicious fresh produce to create the tastiest and most flavourful toppings for my crumpets.

These are my favourite fruit and veg in season at the moment:

  • Asparagus: Tender and crisp, perfect for savoury toppings
  • Rhubarb: Tart and vibrant, ideal for sweet compotes
  • Strawberries: Sweet and juicy, great for both sweet and savoury combinations
  • Peas: Fresh and bright, excellent for spreads and purees
  • Radishes: Crunchy and peppery, add a zesty kick to your crumpets

During this season, farmers' markets (like Carriageworks Farmers Markets on Saturdays!) and grocery stores are brimming with an array of colourful and nutritious options. These seasonal ingredients not only taste better but as a bonus, they’re also often more affordable and environmentally friendly. By choosing seasonal produce, you're supporting local farmers and reducing the carbon footprint associated with long-distance transportation of out-of-season foods.

Spring Inspired Flavour Combinations to Try

  1. Asparagus and Lemon Ricotta

    Lightly grill asparagus spears and spread ricotta on your toasted crumpet. Top with the grilled asparagus, a generous squeeze of lemon and a sprinkle of black pepper.

  2. Rhubarb and Vanilla Bean Compote

    Rhubarb is just fabulous! From its colour to flavour, it feels so luxurious. Simmer chopped rhubarb with vanilla bean and a touch of honey until soft. Spread on your toasted crumpet and top with a dollop of Greek yogurt.

  3. Strawberry Basil Bruschetta

    A classic combo that never disappoints! Macerate diced strawberries with torn basil leaves and a splash of balsamic vinegar. Spoon over a toasted crumpet spread with soft goat cheese. Roughly chopped strawberries work just as well!

  4. Minted Pea Mash

    The simple, humble pea. Blend fresh or frozen peas with mint leaves, lemon zest, and a touch of olive oil for an easy puree. Spread on your toasted crumpet and top with crumbled feta (and chilli flakes or Za’atar).

  5. Radish and Chive Butter

    Mix softened Pepe Saya butter with finely chopped chives. Spread on your toasted crumpet and top with thinly sliced radishes and a sprinkle of sea salt. Very French!

Our crumpets change colour with the seasons! During the spring harvest, the wheat we use gives our crumpets a beautiful light honey to peachy tone.

This unique colour comes from the Hellfire wheat variety, sustainably sourced from family farms in the Golden Triangle region of NSW. It's milled into a special Crumpet Wholemeal flour by FPM Cereal Milling Systems in Tamworth, exclusively for us.

The flour's high protein content and medium-sized bran particles create that perfect texture and mouthfeel you love in our crumpets.
